Garden Skillet

Meal times can be a challenge some days!  You need something easy and fast. You want it to be fairly healthy and something everyone will eat.  I love this skillet.  It is so easy and kid tested. However, one of the kids decided to take the zucchini out. Go figure.

Easy, nutritious and full of flavor, this recipe is super easy to add you own twist to. Add extra vegies that your family loves.

You will need:

1 sweet potato, peeled and diced
2 red potatoes, washed and diced
2 bunches of fresh broccoli (just the tops), cut in small bunches
1 small zucchini, diced
1/2 sweet onion, diced
1 pkg. of kielbasa, sliced and diced

In large pan on medium heat, place a small amount of olive oil, add the vegies and cook until tender crisp.  Add in kielbasa and cook until heated. Serves 4-6.

Make preparing meals easier by planning menus for the week or the month. It is always easier to head to the kitchen and fix dinner when I know what I am going to fix.
