Eating healthy can be a challenge. We have busy schedules and are on the go all the time. In today's episode we share a couple of easy swaps for desserts and snacks to help you feed your family better.
Here are two fun recipes mentioned in this episode.
Berry Salad
1 pkg. each strawberries, blueberries and blackberries
unsweetened shredded coconut
1 can coconut whipping cream
1 tbsp. cocoa
lemon or wild orange essential oil
Wash strawberries, remove stem, and quarter. Place in large bowl. Wash blueberries and blackberries and add to bowl. Sprinkle with a little shredded coconut and gently mix together.
Optional: Cream coconut whipping cream and add 1-2 tbsp powdered sugar and 1 tbsp. cocoa and mix. Serve over berries.
For a fruity topping, eliminate the cocoa and add 1-4 drops of lemon or wild orange essential oil. Flavor to taste.
Homemade Salsa
2 cans diced tomatoes
1-2 cans diced green chilis
3 chili tepins (can find in Mexican food aisle at the grocery store)
1 yellow onion
1/2 bunch of fresh cilantro OR 1-2 drops of Cilantro essential oil
garlic salt or garlic powder and salt
Directions:
1. Peel and quarter onion. Place in food processor or blender with Cilantro and chili tepins. Blend.
2. Add tomatoes and green chilis and blend.
3. Add garlic salt to taste and blend.
